Combine flour with sugar, baking soda, cinnamon and salt in a mixing bowl blend well. Add carrots, oil and eggs mix well. Stir in nuts. Pour batter into two greased and floured 8 1/2 x 4 1/2 x 2 1/2 -inch loaf pans. Bake at 375° for 55 to 60 minutes or until a wooden pick inserted in center comes out clean. Cool in pans for 10 minutes. Remove from pans cool on wire racks.
