Preheat oven to 375°. Place apples in a 9-inch pie plate. In a small bowl, mix 1/2 cup of the sugar and cinnamon sprinkle over apples. Bake for 20 minutes.
Meanwhile, in a small mixer bowl at medium speed, beat remaining 1/2 cup sugar and butter or margarine until fluffy. Beat in egg until well mixed. At low speed, beat in flour, baking powder and salt until blended. Stir in coconut and vanilla. Spread over hot apples to within 1 inch of edge of pie plate. Bake 30 minutes longer or until apples are tender and top is browned.
Serve hot or at room temperature with sweetened whipped cream or vanilla ice cream if desired.
