In a medium saucepan, mix gelatin and cider, let stand for 1 minute. Stir over low heat until gelatin is dissolved. Remove from heat.
Stir in cider, sugar and lemon juice until sugar is dissolved chill until mixture mounds when dropped from a spoon.
Gentle stir in apples, mincemeat and celery. Spoon into a 5-cup mold. Cover and chill until firm.
To serve, unmold onto a chilled plate.
