Prepare and prebake pie shell as directed. Remove from oven, set aside, and reduce heat to 300° F. Brush shell with egg white and allow to dry. In large mixer bowl cream butter add sugar, 1/2 cup at a time, creaming well. Beat in eggs. Gradually blend in flour and salt. Stir in buttermilk, vanilla, and optional almond extract. Sprinkle nuts in bottom of prepared shell pour in filling. Bake for 1 1/4 to 1 1/2 hours, or until knife inserted near center comes out clean. Cool.
Note: For a delicious, but less sweet pie, use 1 1/4 cups sugar.
