Wash and dry apples. Insert a wooden popsicle stick into stem end of each apple set aside.
Place peanuts in a shallow bowl set aside.
In a 2-cup microwavable measuring cup or deep bowl, place caramels, peanut butter and water. Microwave, uncovered, at 100% power (700 watts) for 2 to 2 1/2 minutes or until caramels are melted and mixture is boiling, stirring well after 2 minutes.
Dip and turn each apple in caramel mixture, coating at least two-thirds of apple and carefully scraping excess off bottom. If caramel mixture starts to set up before all apples are dipped, microwave remaining mixture at 100% power for 10 to 20 seconds to soften. Dip apples in peanuts, then place on waxed paper-lined plate or into paper cupcake liners until caramel mixture is set.
Store in a cool place or refrigerate. Remove from refrigerator 20 minutes before serving.
