Dainty, decorative sandwiches are always popular at an afternoon gathering or for a cocktail buffet. They can be made ahead in a variety of shapes and flavors, and keep well until serving time if stored properly. Line the bottom of a shallow container with a damp tea towel cover the towel with waxed paper. Arrange a few layers of sandwiches with waxed paper between the layers. Cover tightly with foil and refrigerate until serving time. Certain sandwiches freeze well, but do not freeze those made with mayonnaise, sour cream, lettuce, tomato or hard-cooked egg whites.
