Cool tart shell set aside.
Reserve four or five strawberries for garnish. Slice remaining berries and place in a medium saucepan. Over medium heat, cook sliced strawberries, water, 1/3 cup sugar, cornstarch and salt until mixture comes to a boil boil for 1 minute. Stir in food color. Place mixture in freezer for 5 minutes or until mixture cools to room temperature.
Slice bananas into tart shell. Top with strawberry mixture. In a small mixer bowl at medium speed, beat whipping cream, 2 tablespoons sugar and vanilla until stiff. Spread mixture over strawberry layer. Chill at least 2 hours or up to 8 hours.
Just before serving, cut reserved berries in half and garnish tart.
