Tuna Train Cars

Ingredients

Equipment Needed:
can canopener
Medium bowl
Dry measuring cups
Metal spatula
Cutting board
Medium knife
Measuring spoons
Fork
Small knife
Spoon
4 plates
Long toothpicks
2 (7-ounce) cans tuna drained and broken into chunks
2/3 cup mayonnaise
1/2 cup celery chopped
1/4 cup sweet pickle relish
1/4 teaspoon salt
4 long sandwich rolls, unsliced
8 lettuce leaves rinsed and dried
16 oranges small slices ( 1/4 -inch thick)
16 cloves whole
4 olives pitted

Directions:

In a medium bowl, mix tuna, mayonnaise, celery, relish and salt with a fork, breaking up the tuna as much as you like.

On a cutting board, cut a lengthwise opening in each roll with a small knife.

Place 2 lettuce leaves in each roll, letting the edges stick up above the sides of the roll. Spoon 1/4 of the tuna mixture into the opening between the leaves. Gently squeeze the sides together.

Place each roll on a serving plate. Stick two toothpicks through each roll about 1 inch from each end.

For wheels, stick 1 orange slice on each end of the toothpicks. Stick 1 clove in the center of each orange slice next to the toothpick.

Insert a toothpick in the top of each roll near one end. Top each with an olive to make a passenger's head.
