Dieter's Delight Vegetable Soup

Ingredients

2 1/2 cups Chicken Stock
1 teaspoon lite soy sauce
1/8 teaspoon thyme
1/8 teaspoon basil
1/4 teaspoon dried onion flakes
1/4 pound fresh broccoli, cut into bite-size pieces
1 medium carrot, cut into 2 1/2 x 1/2-inch strips
1 cup lettuce, shredded

Directions:

1. Combine all ingredients except lettuce.

2. Boil gently 4 to 5 minutes or until vegetables are tender.

3. Stir in lettuce. Serve hot.

NOTE: Homemade Chicken Stock is preferable OR use 1 can (10 3/4 oz.) low-sodium condensed chicken broth and 1 can water OR use 3 packets of low-sodium chicken bouillon granules and 2 1/2 cups of water.
