Preheat the oven to 400°F. In a large bowl, combine all the ingredients and toss to coat the potatoes.
Spread the potatoes in a large baking dish or onto a baking sheet. Roast for 45 minutes, or until the potatoes are crisp on the outside and tender when pierced with a knife.
