Meaty Tomato Sauce

Ingredients

2 tablespoons olive oil
1 medium onion, chopped
2 cloves garlic, minced
8 ounces ground beef
8 ounces ground pork
8 ounces ground veal
1 (28-ounce) can tomato in thick purée, chopped
1 (8-ounce) can tomato sauce
1/2 cup hearty red wine
2 teaspoons dried oregano
2 teaspoons dried basil
1/4 teaspoon red hot pepper flakes

Directions:

In a large saucepan, heat olive oil over medium heat. Add onion, chopped, and cook until softened, about 3 minutes. Add minced garlic cloves and cook for 1 minute. Add ground meat loaf combination (ground beef, ground pork, and ground veal). Cook, breaking up the meat into large chunks with a spoon, until seared, about 10 minutes. Add can tomatoes in thick purée, chopped, can tomato sauce, hearty red wine, dried oregano, dried basil, and hot red pepper flakes. Bring to a boil over high heat, then reduce the heat to low. Simmer, stirring often, until the sauce thickens, about 2 hours. Skim off any fat on the surface. Serve hot.
