Tarragon Shrimp Spaghetti

Ingredients

1 clove garlic, minced
1 1/2 tablespoons olive oil
1/2 cup white wine
1/2 cup chicken broth
1/2 teaspoon lemon juice
1/4 teaspoon tarragon
2 teaspoons butter
1 cup uncooked shrimp
cooked spaghetti or linguini

Directions:

Sauté garlic in olive oil. Add wine, broth, lemon juice, and tarragon. Blend together, then add butter and shrimp. Cover and cook for about 3 minutes or until shrimp have just turned pink. Do not overcook or the delicate flavor will be lost. Serve shrimp sauce over spaghetti or linguini.


Fun Fact: Tarragon is one of the most distinguished culinary herbs, known for its distinctive anise-like flavor. Tarragon has two varieties: Russian and French tarragon. French tarragon is the variety cultivated in the U.S. Freshly cut leaves are dried within hours to preserve their color. Care should be taken when using tarragon since its assertiveness can easily dominate other flavors.
