When a whole meal might be too much food for a friend to eat, a simple salad or warm vegetable dish might be just the thing he or she needs.

These nutritious salads and sides can be eaten as meals in themselves or as an accompaniment to other recipes in this book. You can bring the warm vegetable dishes straight from the oven or assemble them ahead of time and bake them at your destination. Most of the salads can also be assembled ahead of time and kept at room temperature for up to 2 hours or covered and refrigerated for as long as overnight.
