1 Pour the oil into a medium pot. Add the onion, pepper, and sausages and cook, stirring occasionally, until the vegetables are tender and the sausages are lightly browned, about 10 minutes.
2 Add the tomatoes, green beans, crushed red pepper, and salt to taste. Add 3 cups cool water and bring to a simmer. Lower the heat and cook 15 minutes.
3 Transfer the sausages to a plate. Thinly slice the sausages and return them to the pot.
4 Stir in the rice and cook until the rice is tender, 15 to 20 minutes more. Serve hot.
