Season fillets. Brush with olive oil. Grill to medium.
Red Onion Butter:
Sweat onion in a little butter with a pinch of salt covering pan and cooking 5 minutes. The moisture will be drawn out of the onion without caramelizing onion. Add red wine. Reduce, then add cream; reduce until thick. Whip in softened butter, one chunk at a time. Season with salt and pepper to taste. Place salmon on plate; put Red Onion Butter on side. Garnish with fresh vegetables.
