Place potatoes, onion, and salt in a 4-quart soup pan. Cover potatoes with water and bring to a low boil. Lower heat and simmer, uncovered, 15–20 minutes, or until potatoes are tender. Add milk and parsley. Cook an additional 10 minutes over medium-low heat. Do not boil after milk has been added. Makes 8 servings.
VARIATION: Add 1 cup ham, cooked and cubed, or 1 cup carrots and celery, peeled and diced, with potatoes and onion.
