Put the cashews and salt in a food processor fitted with the S blade and process until coarsely ground. Add the dates and process until the mixture begins to stick together. Add the chocolate chips and pulse briefly, just to mix. Transfer to a small bowl to serve. Stored in a sealed container, Chocolate Chip Cookie Dough will keep for 1 month in the refrigerator or 3 months in the freezer.
