1. Preheat the oven to 350°F.
2. Heat the oil in a medium saucepan over medium-low heat. Add the onion and sauté about 5 minutes, or until soft and beginning to brown. Turn off the heat and let cool.
3. To the cooled onions, add the potatoes, tomato sauce, paprika, salt, and enough water to almost cover. Cook the potatoes slowly over low heat for 30 minutes, stirring occasionally and carefully to avoid breaking the potatoes. Add the knockwurst and cook about 10 minutes. Spoon the mixture into the bread bowl.
4. Wrap the bowl with aluminum foil, leaving the top uncovered. Place the bowl on a baking sheet in the middle of the oven, and bake for 12 minutes or until the casserole is heated through. Carefully remove the foil and continue to bake another 3 minutes.
5. To serve, spoon the casserole onto individual plates, then cut the bread bowl into pieces to serve with it.
