• Combine the juice and agar-agar in a small pan. Bring to a boil then reduce to a simmer. Simmer for 4 to 5 minutes, stirring until the agar is dissolved. Remove from the heat and stir in the stevia extract and vanilla.
• Pour into a shallow dish, and chill several hours until set.
• Remove from the refrigerator. Break up the agar with a spatula, and place it in a blender or food processor. Puree on low speed until creamy. Blend in the cashew butter or tahini. Spoon into custard cups and serve immediately.
NOTE: This dessert is best if you use agar. If using gelatin, sprinkle the gelatin over 1/2 cup cold juice in a wide bowl. Let soften for several minutes. Heat the rest of the juice to the boiling point and pour into the gelatin. Stir until the gelatin is dissolved, about 3 to 5 minutes. Mix in the stevia extract. Refrigerate until set. Remove from the refrigerator. Break up the gelatin and place in a blender. Blend with the nut butter until smooth. Serve immediately or return to the refrigerator to re-set.
