Festive Fig and Bacon Stuffing

Ingredients

1/4 cup butter or magarine
1 cup chopped onion
1 cup chopped celery
3 medium Granny Smith apples peeled, cored, and chopped
1 cup chopped dried fig
1/2 cup finely chopped fresh parsley
6 cups cornbread or seasoned stuffing mix
4 ounces bacon diced and cooked crisp
2 cups chicken broth

Directions:

1. Preheat the oven to 350°F. Lightly grease a 2 1/2- to 3-quart casserole dish and set aside.

2. Place the butter or margarine in a medium-sized skillet, and melt over medium heat. Add the onion and celery and sauté for 5 minutes, or until soft. Stir in the apples, figs, and parsley.

3. Combine the stuffing mix and bacon in a large bowl. Pour the apple mixture over the stuffing mix, add the chicken broth, and stir to combine well.

4. Transfer the stuffing to the prepared dish, cover, and bake for 30 to 40 minutes, or until heated through. If a crisp top is desired, uncover the dish and bake for 10 additional minutes.
