Fig-Stuffed Baked Pork Chops

Ingredients

4 boneless 1 inch thick pork chops (4 to 5 ounces each)
STUFFING
3 cups cornbread or seasoned stuffing mix
1/2 cup melted butter or margarine
1/2 cup chopped onion
1/2 cup chopped dried fig
3/4 cup apple juice

Directions:

1. Preheat the oven to 350°F. Spray a shallow baking dish with nonstick cooking spray and set aside.

2. To make the stuffing, in a large bowl, combine the stuffing mix with the butter or margarine, onion, and figs. Gradually add the juice, blending lightly but thoroughly. Set aside.

3. Rinse the pork chops and pat them dry. Heat a large skillet over medium heat. Brown the pork chops in the hot skillet.

4. Arrange the pork chops in the prepared baking dish, and pile the stuffing on top of the pork, evenly dividing the mixture among the chops. Then cover with aluminum foil.

5. Bake for 40 minutes, or until the pork chops are thoroughly cooked and tender, or a thermometer inserted in the chops reads at least 160°F.
