Heat olive oil in a medium skillet over high heat. Add red onions and garlic and sauté until lightly browned about 1 ½ minutes. Add chicken and Serrano chili and stir fry 2 minutes. Add all remaining ingredients except mint sprigs and cook, stirring constantly, 3 minutes. Transfer to a platter, garnish with mint, and serve.
