Toss chicken in cornstarch. Saute in oil in a frying pan over medium-high heat, turning constantly for 3–5 minutes, or until lightly browned.
Meanwhile, in a small saucepan bring remaining ingredients to a boil and whisk until sugar is dissolved and sauce is thickened, about 3 minutes. Pour sauce over chicken and toss.
Turn toaster oven to bake at 375 degrees.
Place chicken in a single layer on an 8 x 11-inch baking sheet prepared with nonstick cooking spray and bake for about 30 minutes, turning over after 15 minutes. Serve hot. Makes 4–6 servings.
