Thanya's Corn Salad


Serves: 4

Ingredients

4 ears corn
1 green bell pepper diced
1 red bell pepper diced
1 red onion diced
2-4 tablespoons chopped cilantro
1/4 cup freshly squeezed lime juice with pulp
2-4 tablespoons olive oil
salt and pepper to taste
1 small jalapeƱo pepper deseeded and minced very fine (optional)

Directions:

Steam or boil corn about 7 minutes. Cut off kernels with a very sharp knife. Combine all ingredients and adjust salt and pepper to taste.
