Yield: 1 Sandwich
1. Mix the cheeses together and crumble half over each slice of bread. Place under the broiler or in a toaster oven for 1 minute, or until the cheese melts. Transfer the open-faced slices to a large plate.
2. On one slice, add the tomatoes, olives, and arugula, then cover with the other slice.
3. Cut the sandwich in half diagonally, and serve immediately.
FYI . . .
Stuff fresh calendula flowers or nasturtiums inside sandwiches and wraps like slices of pickle. Feel like a kid again with each bite.
