Tony Roma's Carolina Honey BBQ Sauce

This smoky sauce is perfectly sweetened with honey and molasses, and bites just a bit with pepper sauce. Smother pork spareribs with the sauce, as they do at the restaurant chain. Also use it on baby back ribs and beef spare ribs along with the slow-cooking technique. It's good with chicken, too.


Cook Time: 45 minutes

Ingredients:

1 cup ketchup
1 cup vinegar
1/2 cup molasses
1/2 cup honey
1 teaspoon liquid smoke
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon tabasco pepper

Directions:

1. Combine all of the ingredients for the barbecue sauce in a saucepan over high heat. Blend the ingredients with a whisk until smooth.

2. When the mixture comes to a boil, reduce the heat and simmer uncovered.

3. In 30 to 45 minutes, when the mixture thickens, remove it from the heat. If you overcook it and make the sauce too thick, thin it with more vinegar.
