Green Beans with Almonds and Roasted Red Bell Peppers

Ingredients:
3/4 cup | sliced raw almonds |
1-2 pounds | fresh green beans |
1 tsp | minced garlic |
1/2 cup | red bell pepper,diced |
1 1/2 tsps | organic, extra virgin olive oil |
1/4 tsp | sea salt |
dash | freshly ground black pepper |
Directions:
1. Wash and trim ends from green beans. Place in steamer basket and steam 15 minutes our just until crisp tender.
2. Meanwhile, In small frying pan, add sliced almonds. On medium heat, and watching constantly, stir almonds until toasted. Remove and set aside.
3. In same pan used for almonds, turn heat to medium/low and add olive oil. Add diced red bell pepper and minced garlic. Stir fry 3-5 minutes. Remove from heat before garlic browns.
4. Toss bell pepper mix, green beans, salt, and pepper. Place in serving dish and top with almonds.
