Dale's Pineapple-Filled Sweet Potatoes

Ingredients

3 large sweet potatoes
1 tablespoon margarine
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup crushed pineapple, drained (reserve juice)
1 tablespoon milk
1/2 cup pecan pieces (optional)
1/2 cup miniature marshmallow
2 tablespoons reserved pineapple juice, heated

Directions:

Bake sweet potatoes at 450° for 40 minutes till soft. Split potatoes in half lengthwise; scrape out meat. Take care not to break shells. In bowl, mash potatoes, adding margarine, seasonings, pineapple, milk, and nuts, if desired. Refill the shells. Place in 1-quart casserole. Top with marshmallows. Baste with hot pineapple juice. Bake at 325° for 20 minutes, till marshmallows are lightly brown.
