2 pounds veal steak, cut into serving portions
salt and pepper
flour
2 eggs, beaten
1 cup bread crumbs
1 tablespoon oil
1 tablespoon butter
1 cup red wine (to cover meat)
1/4 teaspoon thyme
1/4 teaspoon rosemary
1 bay leaf

Coat veal pieces with seasoned flour; dip in eggs, then in bread crumbs. Brown veal pieces quickly in oil and butter. Arrange meat in casserole. Add wine (enough to cover meat) and herbs. Cook at 350° for at least 30 minutes. This dish can be kept in a warm oven for up to 1 hour. Add more wine if necessary.
