Apple Fritters For A Crowd

Ingredients

2 cups flour, sifted
1 tablespoon baking powder
1/4 cup sugar
1 teaspoon salt
1 1/2 cups milk
2 large eggs
6 to 8 large apples (I love pink lady variety)
cinnamon sugar or powdered sugar (optional)

Directions:

Sift dry ingredients together. Add milk and eggs. Beat well. Peel and core apples, then slice apples into 1/4-inch thick rings.

Dip rings into batter and drop into a Dutch oven with 1-inch to 1 1/2-inch hot 365°F melted shortening. Fry until golden brown on both sides, about 1 1/2 minutes each side. You may need to flip rings over half way through cooking to fry both sides

Drain on a cake cooling rack or paper towels. Sprinkle cinnamon sugar or powdered sugar over the top of fritters and serve hot.
