Dutch Oven Roasted Garlic

Ingredients

4 to 8 whole bulbs garlic
extra virgin olive oil (EVOO)
pinch kosher salt for each bulb

Directions:

Carefully cut the top of each bulb, just enough to open the top of most of the cloves. Place the garlic cloves cut side up into an 8-inch or larger Dutch oven, depending on how many cloves you will roast. Lightly drizzle EVOO over the tops of the garlic then sprinkle a little salt over the garlic bulbs. Cover the Dutch oven and bake 35 to 40 minutes at 350°F to 375°F. Let cool 30 minutes before serving.

Serving suggestions: use as a spread over bagel crisps or bruschetta, etc. You can also just pop the cloves easily out of the skin and eat plain or add as little or as much as you want to mayonnaise or butter for a delicious spread.
