Prepare cookie dough according to package directions; mix in food coloring. Cover and refrigerate 3 hours. On a lightly floured surface, roll dough to 1/4-inch thickness. Cut dough with a 3-inch tree-shaped cookie cutter. Place on ungreased baking sheets. Bake at 350 degrees for 7 to 9 minutes. Immediately cut half the cookies in half vertically; trim bottom of all tree trunks so they are straight. Cool on baking sheets one minute; cool completely on wire racks. Color half the Royal Icing with green food coloring. Spread green icing down cut edge of a half cookie. Press a half cookie to center of a whole cookie; let set. Attach a half cookie to back of the whole cookie. Decorate as desired.
Royal Icing:
Combine powdered sugar and meringue powder. With an electric mixer, gradually beat in water until icing is desired consistency. Beat until glossy, 5 to 7 minutes.
