Frozen Lemon Pie


Serves: 6

Ingredients

1 cup vanilla wafer crushed
1/4 cup lemon juice
2/3 cup sugar
1/8 teaspoon salt
Grated rind of one lemon
4 eggs
1 cup whipped cream

Directions:

Beat egg yolks well. Add lemon juice, lemon rind, salt, and sugar. Cook in double boiler, stirring until thick. Set aside to cool. When cool, fold in beaten egg whites, then the whipped cream. Spread half the crumbs in a large pie tin. Pour lemon mixture over the crumbs and cover with the remaining crumbs. Freeze.
