1. Melt chocolate chips over very low heat. Transfer to a medium bowl. Stir in egg yolks and orange juice concentrate.
2. Beat egg whites and salt in a small bowl with electric mixer until soft peaks form when beaters are lifted. Gradually beat in sugar. Beat until stiff peaks form. Beat cream in a small bowl with electric mixer until stiff peaks form.
3. Fold egg whites and 1 cup of the whipped cream into the chocolate mixture until no white streaks remain. Spoon into dessert dishes. Chill at least 1 hour. Garnish with remaining whipped cream and shaved chocolate. Store in the refrigerator.
* Do not use eggs with cracked or dirty shells.
