Cut the potatoes into thick strips, cover with water in a bowl and refrigerate for one hour.
Drain the potatoes and pat dry with a paper towel. Place the drained potatoes and oil in a large plastic bag, seal it and shake well until the potatoes are coated with oil.
Distribute the potatoes evenly on a cookie sheet. Bake for 40 minutes at 450 degrees, turning the potatoes several times. Sprinkle with salt and paprika before serving.
