Heat oven to 350°. Butter a 1 1/2-quart baking dish. Cook macaroni according to directions on package. Mix pimento, pepper, parsley, onion, salt, red pepper, and margarine together with macaroni. Beat eggs slightly; pour over bread cubes. Add 1 1/4 cups cheese. Combine with macaroni mixture. Place in prepared dish. Pour milk over, and top with remaining 1/4 cup cheese. Bake 45 minutes, until top is golden brown.
Note: May be prepared several hours in advance or day before and refrigerated until an hour before cooking time.
