Cook potato in microwave on HIGH for 3–4 minutes, until you can get a fork in easily. Peel and dice potato into 1/4-inch pieces. Beat eggs until smooth. Combine all ingredients and add to beaten eggs. Cook on HIGH for one minute, then stir and cook for one more minute; stir again. If eggs are a little wet, let sit for about 10 seconds and then stir again. Do not overcook unless you like it dry.
