Pancake:
Preheat oven to 450°. Beat eggs, milk, flour, salt, and vanilla until smooth. In a heavy 12-inch skillet, melt butter; pour batter into skillet. Bake 15 minutes; lower temperature to 350°; bake 10 minutes more.
Filling:
Sauté apples in butter and sugar; season to taste with cinnamon and nutmeg. Place pancake on serving dish, then with slotted spoon, add apples to half of pancake; fold over. Pour remaining apple syrup in pan over folded pancake. Serve with additional maple syrup if desired, although not necessary.
