Toddler-proof Tomato Juice
Dear Home Cook'n:
While trying to can tomato juice with a 2-year-old in the house, I came upon this safer way to process the juice. Instead of cooking the tomatoes before running them through the colander, I first wash, stem and cut the tomatoes in half. I run the raw tomatoes through the blender, and then through the colander. That way, my son could "help." In fact, as our family grew, each child had their own colander! Helping mom "make 'mato juice" was one of the highlights of the summer, and one of my favorite memories of my 5 teenagers' growing up years!
After running the raw tomatoes through the colander, I THEN boiled the juice and canned it into hot jars!
