Your Very Own Bouquet Garni

To make a seasoning packet for flavoring stock, broth, or soups, place the seasonings requested by your recipe in the center of a cheesecloth square. Bring the corners together and twist to secure the herbs in the middle. Use a foot of butcher's twine or dental floss and tie one end around the bundle to close it. Tie the other end of the string around the pot handle so that the sachet is suspended in the stock. You can also tie the herbs inside of leek leaves or celery sticks, or simply pack fresh herbs together and tie them securely into a bundle.
