Appealing Peels

Hi Amy,

The best thing about fruit/vegetable peels is the fiber they pack.  Eating potatoes or apples (or other produce)  without peeling is an easy, delicious way to enjoy more fiber for your body.  Also, many nutrients are found right under the peel.  When peeling these, keep the peelings as thin as possible for maximum nutrients.

On the other hand, pesticide residues and other chemicals or waxes are often most concentrated in the peels of fruits/vegetables.  Peeling them will get rid of those.  Alternatively, you can scrub them well in warm water. 

Leaving the membranes on citrus fruit intact also adds additional fiber.  Either way, fruits and vegetables are great for you whether peeled, unpeeled, cooked, or raw because you'll still enjoy great nutrition over something like potato chips or a cookie!  Enjoy 5+ a day for better health.
