Chocolate Substitutions

Hi Dan:  I have a question for you.  Please tell me, If I wanted to make a chocolate Banana Nut Bread.  What would I do.  Do I have to take away any ingredients?   I thought  if I added about a 1/2 cup of Chocolate syrup to the  rest of the ingredients.  It  would probably be OK,  but I'm not  sure.  What do you think?
Mary Ann Shipton

Hi Mary Ann,

I'd go ahead and try adding the chocolate syrup.  It will add 1/2 cup liquid to the batter, but I've baked a range of quick bread batters--some runny and some thick--and they all seem to come out fine.  You will probably have to bake this one longer than the recipe calls for to evaporate the excess liquid.  Alternatively, you could subtract 1/2 cup liquid from the original ingredients (not oil . . . but milk?).

For other chocolate ideas, you could add chocolate chips to the batter, or stir in some baking cocoa with the flour.

Hope this helps,

Desi @ DVO
