Simple Shrimp Primavera

Primavera means spring, and what better way to celebrate the nicer weather than making something bright, fresh, crispy and light! This dish is a very easy meal to put together with some extra cheats along the way (like precooked shrimp and frozen, chopped veggies)! Pasta primavera typically consists of a combination of pasta and fresh vegetables. Any type of veggies can be used but typically broccoli, onion, peas, carrots and tomatoes are used. The sauce usually consists of garlic and olive oil, and a healthy dose of Parmesan Cheese, though some versions do take on a thicker cream sauce, like that of an Alfredo or similar sauce.

Simple Shrimp Primavera
2 teaspoons salt
1 bag frozen vegetables (I suggest a broccoli blend, perhaps one with muschroom, carrots, onions, and red pepper. Another option is a blend with asparagus. Try looking in the stir fry section of the frozen vegetables).
8 ounces thin spaghetti noodles or linguine
1 (10-ounce) package frozen cooked, cleaned shrimp, thawed
1/4 cup grated Parmesan cheese
2 cloves minced garlic
1/4 cup olive oil

To make the meal extra special, add a side salad, a fancy beverage, or even just iced water with lemon slices. Toasted or grilled bread, especially a crusty bread can also bump up this meal. No matter what vegetable or meat choice you use, having an elegant, healthy, and bright colored meal will help your special someones feel very cared about! Another great thing about this meal, is that you can have it on your beloved's table in about 15 minutes! I wish I lived closer to my mama so I could do something extra special for her, but instead I would like to use my foodie writing position to say, I love you mama!
