5 "Charming" Treats to Make With Lucky Charms
Most mornings around here are much of the same--wake the kids up, they groggily roll out of bed , eat a bowl of cereal and grumble their way to virtual school by sweeping a few Cheerios away and camping out with their laptop in the same spot they just ate breakfast. They, like many adults, have fully enjoyed the ability to wear pajama pants on the bottom with a fresh, nice shirt or blouse up top. Ahhh yeah! One of the perks of distance learning for sure.
This morning, however, was one of the legendary variety. ‘Twas a breakfast to be remembered for centuries. We got up early to do an early morning grocery pickup and you know how it is for kids when they see fresh new groceries with some of their favorite eats--they go nuts! New Oreos, chocolate milk and Doritos, oh my! (FYI there was also, you know, asparagus, cauliflower and other green things in the pickup too, but I don’t know any kid who is going to be more excited about asparagus than Double Stuf Oreos :)
Anyway, things were starting to get really exciting and loud when we when they saw we were restocking all our favorite cereals that were on sale and the kids started shouting out their favorites and firmly picking sides. My six year old son and three year old daughter are on team Lucky Charms--my nine year old daughter and I are on team Raisin Bran Crunch, which is hands-down, no doubt about it, the BEST cereal ever! Especially with banana slices in it, just sayin’.
We started having a very dramatic pretend battle with each team divided on either side of the table. I even turned on some very dramatic battle music in the background with loud drums, opera music, brass and strings--the whole works! It was an intense ten minutes, growling at each other, stomping our boxes towards the other side. There were lots of slow motion “NOOOOOOOOO’s” and giant crashes of cereal boxes with explosions of bran flakes and brightly cheerful marshmallows. Even the cheeky face on the back of the Cinnamon Toast Crunch box tried to get in on the action. Turns out--he was a turncoat! He started with the Lucky Charms but when the rubber band slingshots were about to emerge, he got smart and knew he had a better chance with the hefty, plump raisins and oat cluster cannon balls, which the light, cheery marshmallows were never destined to be.
It turns out Team Lucky Charms were indeed lucky after all as they were saved by the virtual Zoom bell-- it was time to login into school. Who knows what might have happened this fateful morning. Perhaps the battle will have to continue on the weekend when Dad will be there to pick and join a side :)
While Lucky Charms, with their delicious cheery, colorful marshmallows aren’t cut out for a battle of epic proportions at a breakfast table, it is the perfect dry cereal to make really adorable desserts and treats just in time for St. Patrick’s Day.
Here are five really fun treats you can make out of Lucky Charms with or for your loved ones to celebrate that fun holiday:
1. Lucky Charms Cupcakes. You can make the cutest cupcakes for St. Patrick’s Day by making funfetti cupcakes, white marshmallow cream frosting and sprinkling a few Lucky Charms marshmallows on top. This is going to be what I make for a treat for St. Patrick’s Day (but possibly others on this list too! Shhhh--don’t tell!). My kids will love this cute treat for sure. The recipe for these charming cupcakes, pun very much intended, is at the bottom of the article.
2. Lucky Charms Munch. This is a yummy sweet and salty Chex Mix type treat with clusters of pretzels, Lucky Charms marshmallows, M&M’s, and sprinkles, all mixed with melted white chocolate.
3. Lucky Shamrock Shake. Instead of getting a shamrock shake from McDonald’s or another restaurant this year, you can easily make them at home and top with some whipped cream and a good sprinkling of Luck Charms marshmallows for the best and most festive shamrock shake ever!
5. Lucky Charms Ice Box Cake. You should go look up the recipe for Lucky Charms ice box cake from communitytable.com and you will see why this might be my favorite. It is a beautiful cream cheese type cake starting with a pie crust made out of ground Lucky Charms cereal, then the filling has cream cheese, whipped cream, marshmallow fluff and Lucky Charms marshmallows. It is then topped with even more Lucky Charms marshmallows all around the top of the cake. So bright and fun and you heard me say the words ‘cream cheese’, right? ;)
6. Lucky Charms Rice Krispy Treats. You can easily swap out the Rice Krispies cereal with Lucky Charms and add some sprinkles for a fun new take on traditional Rice Krispy treats.

Lucky Charms Cupcakes

1 cup whole milk, divided
6 large egg whites
1 tablespoon vanilla extract
1/4 teaspoon almond extract
23/4 cups cake flour
1 1/2 cups granulated sugar
1 tablespoon + 1 tsp baking powder
3/4 teaspoon salt
3/4 cup (1 1/2 sticks) unsalted butter, at room temperature
1/2 cup multi-colored sprinkles
1 cup (2 sticks) unsalted butter, at room temperature
2 cups powdered sugar
7 1/2 ounces marshmallows fluff
2 teaspoons vanilla extract
Directions:
Preheat oven to 350 degrees F. Line two muffin pans with paper liners and set aside.
In a liquid measuring cup, combined 1/4 cup of the whole milk, egg whites, vanilla extract and almond extract. Whisk until combined.
In a stand mixer, combine the cake flour, granulated sugar, baking powder and salt. Mix on low speed for about 30 seconds. Add the butter and continue to mix on low speed until the mixture resembles wet sand. Add the remaining 3/4 cup whole milk. Increase the speed of the mixer and beat for an additional 1-2 minutes. With the mixer now on low speed, add the egg white mixture in three addition, mixing for at least 20 seconds after each addition. Scrape down the sides of the bowl as necessary. Add the sprinkles and gently mix with a rubber spatula.
Divide the batter between the prepared muffin tins. Bake for approximately 18 minutes or until an inserted toothpick comes out clean. Allow cupcakes to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
While the cupcakes are cooling, prepare the frosting. In a stand mixer, beat the butter until light and creamy, about 3-4 minutes. With the mixer on low speed, slowly add the powdered sugar. Gradually increase the speed and mix until fully incorporated. Add the marshmallow fluff and vanilla extract. Beat until light and fluffy, another 1-2 minutes.
Pipe frosting on cooled cupcakes. Garnish with Lucky Charms.
