Tacos Reinvented
My hunt for warm, easy but delicious meals for winter nights underway. To get out of my cooking rut, I’ve tried re-inventing some old favorite! It’s fun to experiment with meals my family already knows and loves by putting them in a bowl to serve! This taco recipe is a great way to use familiar ingredients and flavors, but put a whole new spin on them.
This recipe has all the familiar pieces: ground beef with taco seasoning, beans, whole kernel corn, tomato, and rice! Instead of cilantro rice as my family usually eats, I’m trading it out for brown rice, and I’m cooking my corn on the cob and cutting it off for the bowl. Like I said, familiar taco ingredients but prepared slightly differently to give a little variation! Here is the recipe:
1 cup brown rice
2 tablespoons olive oil
2 pounds ground beef*
2 (1.25-ounce) package taco seasonings
1 (15-ounce) can black beans, drained and rinsed
1 (15-ounce) can corn, drained
3 Roma tomatoes, diced

Taco Meal Prep Bowls

1 cup brown rice
2 tablespoons olive oil
2 pounds ground beef*
2 (1.25-ounce) package taco seasonings
1 (15-ounce) can black beans, drained and rinsed

Directions:
Cook brown rice according to package instructions, in 2 cups of water. Be sure to season your water with salt as it comes to a boil. Set aside rice when cooked.
Now heat olive oil in a large pot over medium high heat. Cook ground beef until it has browned, about 3-5 minutes. Chop up the beef as it cooks, and stir in the taco seasoning. Drain the excess fat.
Divide your rice into bowls or meal prep containers. Top with ground beef mixture, black beans, corn and tomatoes! Great weeknight dinner and great meal to reheat for later! I hope you enjoy tacos, reinvented!
