Celebrate National Peanut Day with These Peanut Butter Bars

There is something kind of fun about being from a small town and having pot lucks and get-togethers with the same people all the time. I don’t think you necessarily have to be from a small town to understand this though. The same feeling can be found within a church group or close group of friends. If you are active in a big church group, you will find the same kind of concept--that Suzy So-and-so has the best white chocolate cranberry blondies and Steve So-and-so makes the best homemade chili. You are always hoping that the church is having a gathering soon so that Steve can bring his chili and Suzy will bring her blondies. It is kind of fun to have the warm fuzzy feeling of community and knowing people like that.


Food is always there to comfort us so it is fun to receive a special treat from someone who loves you. When I was ten years old, my mom found out that she had leukemia and needed a bone marrow transplant. She moved to Houston, Texas for several months to be treated at M.D. Anderson Cancer Center. While she was gone, my dad was in charge of taking care of all of us six kids that were still at home. The people in our church rallied around our family and we were constantly receiving meals and treats from these loving souls. One of my particular favorites that brings back such loving memories are peanut butter “yummy bars” that a woman named Jill brought us all the time. They are so delicious and highly requested and a staple that she would bring to every event. Thankfully, my mom is one of the lucky ones and the transplant was successful and she is still here with us and is doing great all these years later.

When I think about peanut butter treats I always think of these “yummy bars” and the love from the woman who made them. My two older sisters got that recipe from Jill and love to make them for our family gatherings or for others that need a pick-me-up treat as well. Jill’s legacy of kindness and sharing these peanut butter bars will live on!


Well, in browsing the food holidays for September and seeing that September 13 is National Peanut Butter Day, I couldn’t help but think about my favorite peanut butter recipe that fills my heart with a lot of love for kind and caring people that were there in my life when we needed it. Not to mention it is absolutely delicious! They are a type of “Rice Krispie” type treat with peanut butter mixed in with the Rice Krispies and it is topped with a perfect melted chocolate topping. You refrigerate these bars so the chocolate hardens and they are perfection! You’ll have to give these peanut butter bars a try and see for yourself.

Peanut Butter Yummy Bars

There could not be a more appropriate name for these treats. They are so yummy. Just be careful, you will be tempted to eat the whole batch.

Serving size: 12
Calories per serving: 311

Ingredients:

6 cups Rice Krispies®
1 cup semi-sweet chocolate chips
1 cup butterscotch chips
1 cup Karo corn syrup
1 cup sugar
1 cup peanut butter


Directions:
Start with Rice Krispies in a large bowl. In a medium sauce pan, combine Karo syrup and sugar. bring to a boil. Take off heat or turn to low and add peanut butter. Pour over rice crispies and mix until all is coated. Press into pan (cookie sheets make the best size serving, but this combination will only fill 3/4 of the pan full). In another saucepan, melt chocolate and butterscotch chips. pour over Rice Krispies and enjoy!

(To make an entire cookie sheet full, use 9 cups rice crispies and 1 1 /2 cup all other ingredients).
