Onion Cube Tray
I read your tip about having onions and peppers on hand. Here’s another:
You can chop your onions or celery and then put 1 Tbsp into each compartment of an ice cube tray. Once frozen, pop them out and put them into a labeled freezer bag. You’ll have pre-measured ingredients for your many dishes. I can only assume that this would work for peppers, too, though I’ve never tried it myself. Note: If you use a plastic ice cube tray above, you probably won’t want to use it for ice anymore. It might retain the taste and/or odor of the onions or peppers.
