(It's been fun researching sweet potatoes and recipes, but it's time to move to another topic that we've also had many requests for: vegetarian meals, so for the next few weeks you'll find it here! Our ideas and recipes come from one of our favorite vegetarian websites, which is the site of the Vegetarian Resource Group, a group of registered dieticians and physicians dedicated to providing the truth as well as great advice on eating the vegetarian way. And, the Cook'n Vegetarian CD is also another great resource for vegetarian recipes.)
A staple to most vegetarian diets is soy. Soy products have been a part of the standard diet in China, Japan, Indonesia, and other countries for centuries. In these countries, it is known from personal experience that soy products can play an important role in disease prevention.
On the other hand, heavily-processed, genetically-manipulated (non-organic) soy, or overuse of soy can be unhealthy. It is best to avoid getting sucked into any future "soy supplement hype" and stick to an ocassional, small intake of healthier organic soy products such as tofu, tempeh, miso, soy milk, natto, tamari and shoyu.
With this in mind, heres a great recipe from Eden Foods for a yummy smoothie:
Breakfast Berry Smoothie
2 cups Edensoy Vanilla or Extra Vanilla
6 ice cubes
½ C raspberries, strawberries or blackberries (fresh or frozen)
2 medium bananas, chopped
1 ½ Tbsp wheat germ
1 Tbsp flax seed or 1 tsp flax oil
1 tsp pure maple syrup (optional)
Place all ingredients in blender and blend until smooth. Yum!
