3 tablespoons vegetable oil
6 green onions, sliced
1/2 green bell pepper, seeded and cut in thin strips
1/2 cup celery diced
2 cups white rice, day-old
1/2 teaspoon salt
1 tablespoon soy sauce
2 tablespoons coriander chopped
Heat 1 tablespoon oil in large skillet. Add onion (1/2 cup thinly sliced onion may be substituted for green onions), green pepper, and celery; stir-fry for 2 minutes, adding more oil as needed. Add rice and salt; toss and cook until hot and golden. Stir in soy sauce. Sprinkle with chopped coriander, if desired.
Note: Thinly sliced carrots or mushrooms or both may be stir-fried along with other vegetables. One and one-half cups julienned cooked roast pork or ham or 1 cup diced cooked shrimp may be added to skillet along with rice and salt. If desired, 3 eggs may be whipped and added along with rice; cook until barely set.
