I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. Fat Free Mashed Potatoes

Serves: 3


Download this recipe.

3 medium potatoes, peeled and chopped
3 teaspoons butter buds
1 teaspoon black pepper
2 tablespoons skim milk, more if desired


Place chopped potatoes in a 1 1/2 qt saucepan with enough COLD water to cover. Bring to boil. Boil uncovered for about 30 minutes or until potatoes are fork tender. Drain water and transfer to a bowl. Add butter buds, pepper and milk. Mix with electric mixer at med-low speed until nice and fluffy. No need to add salt because the butter buds have enough.
